Field stripping the Walther P99 is a breeze. It's much easier to strip and put back the P99 together than the Walther P22 as the P22 requires a plastic guide rod to put the slide back onto the frame.

Beyond the field strip, however, I'm at a lost. I really wasn't sure how one would get to the decocker, extractor, etc. Luckily there was a link from WaltherForums to the following video by Thorn on how to properly disassemble the slide of the Walther P99. Enjoy!
